But what is an espresso?
The vast majority of coffee experts consider brewing coffee fast and under high pressure (7 to 9 bars) the ideal way to extract maximum flavor and aroma from your coffee beans. The high pressure and the short brewing time prevent the extraction of bitter oils and release less caffeine than other brewing methods.
When this technique is used to brew one to two ounces of coffee it is considered an espresso. If the grinding, tamping of the ground beans and the pressure of the water all come together in the right combination your espresso will always feature a foamy layer on top, called "crema". The crema traps the fine aromatics and the light gaseous flavors that register on the palate. It keeps the flavors, which would other wise escape, locked in. A good crema is the hallmark of a well prepared espresso and is something you will enjoy on every cup of espresso made with a JURA espresso maker.
